Smashed Beans Sandwich Spread
Another quick dish if you're short of time...
1 tin mixed or white beans
3 cloves minced garlic (or more)
1 tsp green herbs of your choice
1 Tblsp olive oil.
Salt and pepper
Mash together beans, garlic, herbs and olive oil. Season to taste.
Spread on a baguette or bread of your choice and top with red roasted peppers, or other veg of your choice (fried courgettes, grated carrot, tomatoes and salad, etc.).
