There are millions of salsa recipes, this is just a start.
4–6 tomatoes, mostly seeded & chopped
2 diced white onions
2 minced cloves of garlic
1/2 bunch coriander, minced
2–4 chipotles (or equivalent) rehydrated & pureed
Juice from 1–2 limes
Salt & pepper to taste
Mix together above ingredients & serve!
Experiment with chilli varieties, roasting the veg first & part–blending (e.g. half).
