Couscous is one of the quickest, easiest things you'll ever cook – just boil 1 ¼ parts liquid for 1 part couscous, pour it over the grain and let stand till fluffy. Use bulgur instead with a ratio of 2 (liquid) to 1 (grain).
200ml stock & 200ml orange juice
1 tsp cinnamon & ½ tsp ground coriander
2 tomatoes, chopped
½ bunch each parsley & mint (or herbs of choice), chopped
1 garlic clove, crushed
4 Tablespoons olive oil
salt & pepper
Combine liquid, spices and ½ tsp salt and bring to a boil. Add couscous, remove from heat & cover for 10 minutes.
Mix together remaining ingredients, add couscous and season to taste. Serve warm or at room temperature.
